Ganz sch\u00f6n langer Titel, aber nur so hei\u00dft der echte Balsamicessig aus Modena und Umgebung. Die Trauben f\u00fcr den Balsamico-Essig stammen von den Reben der Lambrusco- und Trebbianost\u00f6cke. Der Most wird bei ziemlich niedriger Temperatur \u00fcber offener Flamme 4 Tage eingekocht, bis mindestens die H\u00e4lfte der urspr\u00fcnglichen Fl\u00fcssigkeit verkocht und ein Sirup entstanden ist, der schon jetzt dicker ist als der angebliche \u201eAceto Balsamico\u201c aus dem Supermarkt. Nach einer Filterung wird diesem Sirup mindestens zehn Jahre alter Balsamessig und 10 % frischer Wein zugef\u00fcgt. Je \u00e4lter der Essig, desto dickfl\u00fcssiger wird er. Die verschiedenen Holzarten und die Fermentation verleihen dem Balsamico seinen eigent\u00fcmlichen Geschmack und seine Farbe. Die Reihenfolge der Holzarten (Eiche, Edelkastanie, Vogel-Kirsche, Esche und Maulbeere) spielt dabei eine wichtige Rolle und gibt dem Essig zus\u00e4tzliche Aromen. Aufgrund dieser Rezirkulierung und der jahrelangen Eindickung bleibt am Ende nur noch eine relativ kleine Menge (je l\u00e4nger die Lagerungsdauer, desto kleiner die Menge) \u00fcbrig. Naja, richtige Fabriken sind es ja nicht, sondern meistens kleine Familienbetriebe. Uns empfangen Vater und Tochter Pagani und weisen uns in die Essigkunde ein. Der Betrieb besteht seit knapp 40 Jahren erst und stellt besten Aceto Balsamico Tradizionale di Modena her. Ganz sch\u00f6n langer Titel, aber nur so hei\u00dft der echte Balsamicessig aus Modena und Umgebung. Nicht zu vergleichen mit dem Aceto Balsamico di Modena aus dem Supermarkt. Der traditionelle Balsamicoessig oder auch gerne das schwarze Gold genannt wird aus Traubenmost hergestellt wird, im Gegensatz zum Supermarkt-Aceto, der nur aus Weinessig hergestellt wird. Die Trauben f\u00fcr den Balsamico-Essig stammen von den Reben der Lambrusco- und Trebbianost\u00f6cke. Der Most wird bei ziemlich niedriger Temperatur \u00fcber offener Flamme 4 Tage eingekocht, bis mindestens die H\u00e4lfte der urspr\u00fcnglichen Fl\u00fcssigkeit verkocht und ein Sirup entstanden ist, der schon jetzt dicker ist als der angebliche \u201eAceto Balsamico\u201c aus dem Supermarkt.
